Chocolate Chip Cookie Dough Cheesecake Bars
These were seriously good, friends. I know I say that quite a bit here, but really...really, these were tasty. Forget all the other things I've posted and suggested that you make, and get on these immediately.

The cookie dough part was my personal favorite. Plenty of chocolate chips and no raw eggs, so no salmonella to bring you down. :)
Wait...the cheesecake was the best. Good heavens! When you combine the two...!
I think I cried a little.
I'm crying now just thinking of them, and the fact that they are gone, all gone.

Chocolate Chip Cookie Dough Cheesecake Bars

Prep Time: 20 minutes
Cook Time: 30-40 minutes

Ingredients (9-12 servings)
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- 5 tablespoons unsalted butter, room temperature
- 1/3 cup packed light brown sugar
- 3 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 3/4 cup flour
- 2/3 cup chocolate chips
- 10 oz cream cheese, room temperature
- 1/4 cup sugar
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
Instructions
1. Preheat the oven to 325 F. Line an 8" square baking pan with parchment paper or foil allowing a little overhang and spray with nonstick cooking spray. Set aside.
2. Mix the melted butter and graham cracker crumbs until thoroughly combined. Press the mixture into the bottom of the prepared pan. Bake in preheated oven for 6 minutes. Remove pan to a cooling rack. Leave your oven on while you prepare the dough.
3. While the crust is cooling, prepare the chocolate chip cookie dough. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat butter, brown sugar, granulated sugar, salt and vanilla until smooth and thoroughly combined, about 1 minute. Mix in the flour on low speed, and mix until just incorporated. Mix in the chocolate chips. Set aside. (*Note: This mixture is going to be dry...that’s okay. It’s rather like a crumble topping. You’re going to crumble it on top of the cheesecake layer.)
4. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer cream together the cream cheese and sugar until smooth. Mix in the egg and vanilla on low speed just until incorporated. Pour the cheesecake batter into the prepared crust. Use your hands to form "clumps" of the cookie dough, smoosh it together and flatten it out. Distribute the cookie dough onto the top of the cheesecake batter in teaspoon-sized clumps. Be sure to use all of the dough.
5. Bake for about 30 minutes, until the top feels dry and firm (the cookie dough) and the entire pan looks set if given a gentle shake. Move bars to a cooling rack and allow to cool completely. Chill in refrigerator overnight or for at least a couple hours.
6. Lift the bars out by the overhang and cut into squares for serving.

I made these yesterday to bring to a friends house for dinner and since there was 11 of us I decided to double the recipe and put it in a 9X13 pan and increased baking time by 7 minutes and they turned out great!!! Addictingly good:)
I attempted to make this tonight. I'm hoping it turns out. I'm a little leary on the "cookie dough" part. My "dough" was very dry and barely stayed in clumps....am I missing something? What did I do wrong?
Hi Jessica! I don't think you did anything wrong, the dough is a little dry because there really isn't any "wet" ingredients (like eggs) to sort of bind it together. You are just able to form "clumps" to crumble it over the cheesecake layer. It will bake up just right. Let me know how it turns out or if you have any other questions. Do you need to store them in the fridge after the original overnight cooling? Or can you leave them at room temperature?
Hi! Definitely store them in the fridge. You can let them come to room temp before serving them, but if you have any leftovers, keep them in the fridge. Thanks for stopping by. :)

My dough stayed clumped up too. I flattened them, but they didnt spread and cover the top like the picture showed.
@ Caitlin-I'm so sorry that they didn't work out for you. Two things that might help are to be sure the dough "clumps" are small, teaspoon size as noted and that you use all the dough. It will cover the entire top of the bars-the dough part doesn't really spread. I hope that helps. Thanks for stopping by.

These do look amazing. One question though, you mention "no raw eggs", but there is a raw egg in the recipe. So, I'm confused about that comment.
How long would this freeze for?
Regarding freezing the bars...I just wouldn't. I don't think they would freeze well. You could give it a try though and let me know. :)
@ Kittye- So when I mentioned "no raw eggs" in the post, I was referring to the fact that when you eat cookie dough, from the mixer bowl or whatever, it's unbaked, and if there are eggs in the dough, you are subject to the dreaded salmonella bacteria. The great thing about this recipe is that after it's baked, the "cookie dough" layer tastes like cookie dough! It tastes like unbaked cookie dough, but you don't have to worry about raw eggs...because it's baked. Get it? :) Additionally, the egg in the recipe is in the cheesecake layer, unbaked cheesecake batter just isn't as yummy to eat as cookie dough, IMO. I hope that makes sense. Thanks for stopping by.
Hi there, Brandy. I plan on making these for our Super Bowl party, but I am wondering if you can use pre-made cookie dough. Like, a roll of Pillsbury chocolate chip cookie dough. Do you know if this will work? Thanks! They look delish!
@Nicole...I'm excited that these bars will be on someone's Super Bowl party menu. :) Thanks. I think you would be just fine using a roll of premade cookie dough. I would just suggest that you maybe only use 1/2 to 2/3 of the roll and make sure that the layer isn't too thick (so it will bake evenly and completely). Will you let me know how it turns out? I'm curious! Thanks!
So do you bake the crust and the bars with the parchment paper in the pan???
Yes, you line the pan with parchment paper first, as stated, prepare the bars, and then bake.
To add to the comment about the parchment paper...you don't have to use parchment paper. You can just spray your pan with baking spray first. If you use parchment paper and allow a bit of overhang over the sides, you can easily lift the baked/cooled bars out of the pan to cut them neatly.
Can you freeze these?

These look delicious! I also want to make them for my superbowl party. However, I only have a 9x9in. square pan. Do you think that will work or do I need to buy an 8x8in?
@Alicia-Hi! I think they would be just fine in a 9x9 pan. You'll have thinner layers and maybe just bake it for a little less time. Enjoy!
@Brandy, I made these for the Super Bowl with pre-made refrigerated dough, and they worked wonderfully! I used a little over half of the roll. Sometime when I have a little more time to cook, I'll try your cookie dough recipe, but in a time crunch, it seems that the pre-made stuff works well! Thanks for the recipe!

I just made these. Cough dough "clumps" were teaspoon sized but did not melt down or spread out over the cheesecake layer. After reading through all of the comments & your "crumble" statement, I think it would be better understood if the recipe was re-worded. Maybe instead of saying teaspoon sized clumps it should say a cookie dough crumble? Just a suggestion. I'm sure they'll still taste the same.

I made these tonight for our fellowship time after church tomorrow. Something doesn't look right and I followed the receipe exactly. The cookie dough is very dry and crumbly. Is there supposed to be an egg in the cookie dough??

Very YUMMY! But I do wish that I hadn't used the lowfat cream cheese, graham crackers and Stevia. They tasted great but lacked any moisture! Next time I will have to use the more fatty ingredients!

I pinned the recipe 2 weeks ago and tried it out tonight. I'm glad you described the cookie dough layer - mine looked dry and crumbly, so I knew it was just right :D It was delicious (so much for my diet, argh, lol) - I suspect that a large piece of this will be making it's way to a construction site tomorrow in our oldest son's lunch :)
Made these today.... I used foil to line my 8 x 8 dish. I had to bake them close to one hour because the topping (crumble) just didn't get that dry look. Not sure why. With the crumble I just took teaspoon size clumps and smashed them a bit and laid it on top of the cheesecake layer. Hope they'll tasted good!

Made these last night. I eat gluten free so I used whole gf crackers for the crust. Worked excellent. Used the filling per recipe and for the chocolate chip cookie dough I used Betty Crocker's Gluten free one. That one made the cookie layer too thick but it was still very good. I'll be making this again. tfs
I made these and they were devoured by everyone at my Christmas party. I used a premade cookie dough. Very easy to make!
Would like to make a batch of these for the weekends. But my refrigerator is broken as the sealing strips leaks out the cold compress air. Had issued fridge seals repair perth so I'm waiting for it to dry so my fridge will be ok.

I made these for a party and they were a big hit. But I have a daughter with an egg allergy, and I'm wondering what would happen if I omitted the egg from the cream cheese layer. Would it just be a little more dense? Or do I need to substitute something else?

I made these but was confused because first it said flatten the dough then get a tsp of it. was I suppose to flatten the dough and place it on top or get a tsp scoop like a ball and flatten a little ( which is what I did)? great recipe can't wait till its done setting!
