Chocolate Chip Pumpkin Muffins
A lunch box favorite...that's what these are. My kiddos love to find one of these muffins in their lunch box. They are a special treat that I can feel good about sending in their little lunches. They make a really good afternoon snack too.
Chocolate Chip Pumpkin Muffins!
I usually make a batch of these and freeze them. Sorry...I know I've said this many times before! You just wrap them individually in plastic wrap, put them in a freezer ziplock bag, and you're set. Take them out as you need them. They are fantastic for lunch boxes because they are perfectly defrosted by lunch time.
Since I've mentioned lunch boxes 72 times already, I'll go ahead and mention it a couple more times. :) Does anyone else use Easy Lunchboxes? I love and adore these lunch boxes. My kids take their lunch to school everyday, with the occasional exception for my daughter, she buys her lunch once a month or so. These are AWESOME lunch boxes. They are so convenient--easy to use, dishwasher safe, just the right size and super easy for little hands to open. I would be lost without them. Check them out. :)

Now, back to the muffins...
We usually enjoy these pumpkin muffins in the fall and winter months, but I know you're hoarding canned pumpkin, so you can make them all year long. I know I'm not the only one! (Who else was traumatized by last year's pumpkin shortage?) Also, if you don't have any whole wheat flour on hand, you can sub in more all-purpose flour. I do like the whole wheat flour in the muffins though. It has a little hint of nuttiness. I'm all about nuttiness. :)
Another nice thing about these muffins is that they use a whole can of pumpkin. You don't have a random small amount of pumpkin puree to keep in your refrigerator until the next pumpkin recipe comes along.

Chocolate Chip Pumpkin Muffins

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups whole-wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon or pumpkin pie spice
1/2 teaspoon salt
4 large eggs, slightly beaten
2 cups granulated sugar
1 can (15 oz.) pumpkin puree
1 cup vegetable oil
2 cups (12-oz. pkg.) chocolate chips
1 1/2 cups all-purpose flour
1 1/2 cups whole-wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon or pumpkin pie spice
1/2 teaspoon salt
4 large eggs, slightly beaten

1 can (15 oz.) pumpkin puree
1 cup vegetable oil
2 cups (12-oz. pkg.) chocolate chips
PREHEAT oven to 350° F. Grease 24 standard muffin cups or line with paper baking cups.
COMBINE all-purpose flour, whole-wheat flour, baking soda, baking powder, cinnamon and salt in medium bowl. Combine eggs and sugar in large bowl. Add pumpkin and oil; mix well. Stir in flour mixture until moistened. Stir in chocolate chips. Spoon batter into prepared muffin cups.
BAKE for 20 to 25 minutes or until top springs back when lightly touched. Cool in pans on wire racks for 5 minutes; remove from pans.

Those are great lunchboxes...do you have to buy them online? The muffins would be great to put in them :)
Hi Julie! I sent you a quick e-mail, but I'll post here too...I've never seen the Easy Lunchboxes in stores. I checked their FAQ pages and it says they are just starting to approach retailers to carry their lunchboxes, so maybe soon. :) I hope that helps.
