Banana Pound Cake

I've mentioned before that I love a good pound cake.  They are so simple, yet there is magic...magic makes that simplicity so good.  Actually, I think it's all the butter that makes it so good, but let's stick with magic, shall we.

This pound cake had plenty of magic--perfect pound cake density, but still very tender, buttery and full of banana flavor.

Banana Pound Cake

Prep Time: 15-20 minutes
Cook Time: 1 hour 20 minutes
  • 1 1/2 cups butter, softened
  • 3 cups sugar
  • 5 large eggs
  • 3 ripe medium-sized bananas, mashed
  • 3 Tbsp milk
  • 2 tsp pure vanilla extract
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
1. Preheat oven to 350F. Beat butter at medium speed with an electric mixer for about 2 minutes or until creamy. Gradually add sugar, beating 5 to 7 minutes. Add eggs, 1 at a time, beating just until each egg is incorporated.
2. Combine mashed bananas, milk and vanilla.
3. Combine flour, baking powder and salt; add to batter alternately with banana mixture beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Pour into greased and floured 10" tube pan.
4. Bake at 350F for 1 hour and 20 minutes or until a long wooden pick inserted in the center of the cake comes out clean. Let cool in pan on a wire rack for 10 to 15 minutes. Remove from pan to wire rack, and cool completely.
