Rocky Road Brownies

Rocky Road Brownies


Make some today, before all of those silly resolutions make you feel guilty about eating things like this.  Do it for me.

I found this recipe at Confessions of a Cookbook Queen, a blog that I love and adore not only for the super awesome recipes, but also because her posts make me laugh hysterically.  Check her!


Rocky Road Brownies

Prep Time: 15-20 minutes
Cook Time: 40-45 minutes
Ingredients (18-24 brownies)
    For the Brownie Layer:
    • 1 1/2 cup flour
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 11 Tbsp unsalted butter
    • 1 cup sugar
    • 4 Tbsp water
    • 1 tsp instant espresso powder
    • 2 cups semi-sweet chocolate chips
    • 2 tsp pure vanilla extract
    • 4 large eggs
    • 1 semi-sweet chocolate chips
    For the Marshmallow & Chocolate Layer:
    • 7 oz jar of marshmallow fluff/marshmallow creme
    • 6 tablespoons butter
    • 1/3 cup milk
    • 3 Tablespoons cocoa powder
    • 4 cups powdered sugar
    • 1 teaspoon vanilla
    • 2 cups of chopped or sliced almonds (I toasted mine - yum)
    Instructions
    Make the Brownies:
    Preheat oven to 325.
    Line a 9x13" pan with foil or parchment paper and spray with non-stick spray.
    Combine flour, baking soda and salt in a small bowl and mix to combine.
    In a large saucepan, melt the butter with the sugar and water. Bring just to a boil and remove from heat. Stir in the chocolate chips, espresso powder and vanilla. Whisk in eggs, one at a time, mixing well after each addition. Slowly blend in flour mixture, and mix until batter is smooth and shiny. Fold in the chocolate chips.
    Pour into prepared pan and bake for 34-38 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake--be careful that your toothpick is coated with uncooked batter, instead of melted chocolate, if you are going to continue baking longer.
    Make the Marshmallow/Chocolate Layer:
    As soon as you remove the brownies from the oven, spoon marshmallow fluff evenly over the top of the brownies.
    While the marshmallow fluff melts on the hot brownies, make the chocolate frosting.
    In a small saucepan over medium heat, melt the butter with the milk and cocoa powder until it just starts to come to a boil. Remove from heat and stir in vanilla and powdered sugar. Once fully combined, pour evenly over brownies and using a sharp tipped knife, swirl the marshmallow and chocolate frosting together. Immediately top with almonds.
