Strawberries and Cream Pie

I hope everyone had a very happy 4th of July.  Just a quick post today to get this recipe OUT!  Out to the WORLD!  It's so, so good and just perfect for summer.

Strawberries and Cream Pie!


I found this recipe at Just Putzing Around the Kitchen.  I adapted the recipe ever so slightly and opted to leave off the drizzle of chocolate on top.  I was just lazy.  That, and I'm not crazy about fruit with my chocolate.  I like to keep 'em separated.  


Strawberries and Cream Pie

Prep Time: 15-20 minutes, plus refrigeration
Cook Time: 10 minutes


Ingredients (9" pie, about 12 servings)
    For the Crust
    • 1 1/2 cups crushed graham crackers (about 9 full sheets)
    • 5 Tbsp butter, melted
    For the Filling
    • 2 (8 oz.) blocks of cream cheese, softened to room temperature
    • 2/3 cups sugar
    • 2 tsp pure vanilla extract
    • 2 cups heavy whipping cream
    • 2 Tbsp powdered sugar
    • 1 (16 oz.) carton of strawberries, rinsed and sliced into thirds
    Instructions
    Make the Crust
    Preheat the oven to 375 F.
    In a small bowl, combine the graham cracker crumbs and melted butter. Gently press the graham cracker mixture into the bottom and up the sides of a 9" deep dish pie pan.
    Bake for 10 minutes and set aside to cool completely.
    Make the Filling
    In a large mixing bowl, mix cream cheese, sugar and vanilla until mixture is smooth and creamy. Set aside.
    In a separate mixing bowl, add whipping cream and powdered sugar. Beat with an electric mixer until stiff peaks form.
    Gently fold whipped cream into the cream cheese mixture until evenly incorporated.
    Spoon filling into cooled pie crust and spread it out in an even layer.
    Layer sliced strawberries in overlapping rows around the top of the filling.
    Refrigerate pie for 2-3 hours to allow filling to set up.

    Oh what a beautiful pie! I make something similar - I love chocolate with my fruit, but I normally use strawberry glaze to top off this little lovely. I'm sure you enjoyed every delectable bite!
