Cakes!

I've been neglecting this little blog.  I'm so very sorry, dear readers reader!  I've been super busy with cake orders lately and haven't had a moment to blog about other tasty treats.  I'll be back to blogging soon, in the meantime though, I wanted to share what I've been up to.  Cakes, cakes and more cakes!

I believe I've found my signature style - big fat piped shell borders.  They speak to me, I like the fat shells.  :)  I'm not crazy about writing on a cake, it says "Grocery Store" to me.  That's just my opinion though, don't hate!  I would rather turn out a cake that looks festive and fun.

Menu Plan #10

Oh, hello COLD WEATHER!  We are actually getting a little snow and sleet here in the great state of TEXAS.  Hurry, everyone run to Walmart and buy all the eggs and bread you can lay your hands on!  No joke, northern friends.  If the weatherman weatherperson, even hints at the possibility of an itsy-bitsy spot of ice on the road, we Texans rush to the nearest grocery store to stock up.  Guess where I just happen to have to go today?  Not because I'm worried about being iced in, but because I have NO FOOD in my house.  Can someone please feel sorry for me. :)

Anyway!  Here is my menu plan for the week...if I make it out of the grocery store alive.

My Favorite Brownies

Let's talk BROWNIES this week, shall we?

I love brownies!  I usually turn to one of my favorite brownie recipes when I need a quick and delicious treat for my family or friends.

They're great for after-school snacks too.  Don't judge!  I know they're not on the "healthy snack" chart, but sometimes a kid just needs a brownie after a hard day at school.  We'll save the carrot sticks and pretzels for a day that my kid wasn't referred to as "Taco Head" all day at school.

I put together a small collage of my most adored brownie recipes for you,...because I love you and I want you to have brownies in your life.

I also want to share with you my very favorite and most frequently made brownie recipe.  I love these particular brownies for several reasons, but primarily because a) they are super quick and easy to make and b) they are so good and satisfy even the most powerful chocolate craving.  The recipe produces a cakey brownie-which I happen to prefer.  I'm on team CAKE when it comes to brownies.  Fudgey brownies sometimes give me the creeps.

I give you My Favorite Brownie!



My Favorite Brownies

Prep Time: 15 minutes

Cook Time: 34-38 minutes

Ingredients

  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 11 Tbsp unsalted butter
  • 1 cup sugar
  • 4 Tbsp water
  • 1 tsp instant espresso powder
  • 2 cups semi-sweet chocolate chips
  • 2 tsp pure vanilla extract
  • 4 large eggs
  • 1 cup bittersweet or semi-sweet chocolate chips

Instructions

Preheat oven to 325.

Line a 9x13" pan with foil or parchment paper and spray with non-stick spray.

Combine flour, baking soda and salt in a small bowl; set aside.

In a large saucepan, melt the butter with the sugar and water. Bring just to a boil and remove from heat. Stir in the chocolate chips, espresso powder and vanilla. Stir until chocolate chips are completely melted. Whisk in eggs, one at a time, mixing well after each addition. Slowly blend in flour mixture, and mix until batter is smooth and shiny. Fold in chocolate chips.

Pour into prepared pan and bake for 34-38 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake. (If you are going to continue baking, be careful that your toothpick is coated with uncooked batter, instead of melted chocolate chips.) Cool completely before cutting.
